Pasta is one of my favorite comfort foods. Chicken Alfredo is one of the simplest pasta dishes to make. It can be thrown together easily with just a few of my favorite ingredients. We’re fans of garlic, cream, and cheese around here. The creamy, cheesy Alfredo sauce coating slightly al dente noodles is comfort food perfection!
I love to roast a pan of broccoli to go along side my pasta dishes. This time around I borrowed some garlic from the Alfredo sauce and lemon juice for the chicken to boost the flavor in this roasted broccoli. This is the only way I will cook broccoli from now on. So delicious!
Chicken Alfredo & Roasted Broccoli
Ingredients
for the chicken Alfredo:
- 16 oz 16 ounces dry pasta
- 1.5 lbs boneless, skinless chicken breast
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ lemon
- 2 tbsp olive oil or avocado oil
- 1 stick butter
- 4 garlic cloves minced
- 2 cups heavy cream
- 2 cups shredded parmesan cheese
- salt to taste
- black pepper to taste
for the roasted broccoli:
- 2 lbs frozen broccoli
- 4 garlic cloves minced
- ½ lemon
- 3 tbsp olive oil or avocado oil
- salt to taste
- black pepper to taste
Instructions
For the chicken:

Heat oil in a large skillet on medium heat.

Season chicken breast liberally with salt, pepper, and half teaspoon each of garlic powder and onion powder.

Add chicken to the skillet and cook for 8 minutes.

Add the juice of half a lemon and flip chicken over.

Cover and continue cooking until the chicken reaches 165 degrees, about 7 or 8 more minutes.

Remove chicken from the skillet and allow it to rest at least 5 minutes before slicing.

Carefully wipe out the skillet with a paper towel and place it back on the stove, reducing to low heat.
For the Alfredo:

In a large pot, boil pasta (along with a handful of salt) according to package directions.

In the large skillet the chicken was cooked in, melt the butter and add 4 minced garlic cloves.

Pour in heavy cream and heat until warm, then turn off the heat.

Add the parmesan cheese slowly, stirring to help it melt.

Drain cooked pasta and add directly to the Alfredo sauce, tossing to coat all the noodles thoroughly.

Scoop pasta onto plates & top with sliced chicken.
For the broccoli:

Preheat the oven to 425 degrees.

Steam broccoli in the microwave for 5 minutes.

Place broccoli on a baking sheet. Drizzle with olive oil, salt, pepper, 4 minced garlic cloves, and the juice from half a lemon.

Roast the broccoli for 25-30 minutes, until the edges become brown and crispy.
