S’mores are a classic summer treat, with their melty chocolate and gooey marshmallow, plus the crunch of a graham cracker. Enter the next sure-to-be classic: the s’mores bars.
If we’re being honest, though, s’mores are not the most convenient to make. Sometimes the weather isn’t right for a bonfire, or you don’t want to deal with the bugs. Plus, without a gas fire pit, it can be time consuming just to prep for your s’mores. This summer, I’ve been whipping up these s’mores bars and they’re every bit as delicious as our summertime favorite, without the hassle. All the flavors of a s’more, made in the air conditioning!
For this recipe, I really prefer milk chocolate chips instead of semi-sweet because it tastes closer to an actual s’more, but it’s fine to use if that’s what you have on hand. Dark chocolate chips would be delicious, too!
- 1 cup butter mostly melted
- 1 cup white sugar
- ⅓ cup brown sugar
- 2 eggs separated
- 2 tsp. vanilla extract
- 2¾ cups all-purpose flour
- ½ tsp. salt
- 1 tsp. baking soda
- 1 cup chocolate chunks
- 1 cup marshmallows
Preheat the oven to 350 degrees.
Grease a 13x9 inch pan.
Start by adding the butter and sugars to a large mixing bowl, and beat until smooth.
Add 1 whole egg and 1 egg yolk, plus the vanilla and mix until combined.
In a separate bowl, whisk together the flour, salt, and baking soda.
Slowly add the dry ingredients to the mixing bowl, beating just until the dry ingredients are incorporated.
Spread the dough into the pan evenly. The dough will look spread too thin, but will puff up as it bakes.
Sprinkle chocolate chips and marshmallows across the top.
Bake 20-25 minutes until the edges are set.
