I love having easy breakfast options for busy mornings (or lazy mornings) and these granola bars are great for those days! They’re soft and chewy, with a perfect combination of peanut butter and chocolate. These mix together in just a few minutes and are great for make-ahead breakfasts, or as an afternoon snack.

No Bake Chewy Granola Bars recipe:

2 1/2 c old-fashioned oats

1/4 c coconut oil

1/4 c butter

1 c peanut butter

1/4 c honey

1/4 c brown sugar

1 tsp. vanilla

1/4 c chocolate chips


Spray an 8×8 baking pan with nonstick spray and set aside. In a medium pot, melt together coconut oil, butter, and peanut butter over medium-low heat. Stir in honey and brown sugar. Heat for 1-2 minutes until the mixture begins to bubble slightly. Remove the pan from the heat and stir in the vanilla. Add in the oats and stir to coat. Spread evenly into the baking pan and allow to cool for 1 minute before sprinkling chocolate chips on top, pressing them into the oats with a rubber spatula. Cover and chill for 2 hours, then cut and serve. Makes 16 “brownie sized” bars or 8 rectangle bars. Store covered in the refrigerator for up to a week.
